The Creamy Pea and Spinach Pasta That’s Ready in 25 Minutes

Creamy Pea and Spinach Pasta

Ingredients

• 160 g whole-wheat pasta

• 1 cup Cabera frozen peas

• 1 cup Cabera frozen spinach

• 2 garlic cloves, minced

• 2 tbsp Greek yogurt

• 2 tbsp grated Parmesan

• 1 tbsp olive oil

• Lemon zest and black pepper

Method

1. Cook the pasta according to the package directions. Reserve ½ cup of pasta water before draining.

2. Heat olive oil in a pan and gently cook the garlic.

3. Add peas and spinach and cook until heated through.

4. Stir in the Greek yogurt, Parmesan and a splash of pasta water to create a creamy sauce.

5. Toss with pasta, season with black pepper and lemon zest, and serve.

Meal-prep tip: Add a splash of water when reheating to loosen the sauce.

Make it your own

• Keep the sauce smooth. Take the pan off the heat before you stir in the yogurt. High heat can make yogurt split.

• Add protein. White beans or leftover chicken slide right into the pan.
