Winter Creamed Spinach & Mushroom Gratin

On Christmas Eve, no fresh spinach was available. Instead, Cabera Spinach discs were transformed into a velvet-like richness—more indulgent than the traditional creamed spinach. This dish offers a luxurious twist perfect for the holiday season or a cozy winter dinner.

Ingredients

  • 6 discs of Cabera Spinach (49 g each)

  • 200 g of mushrooms

  • 150 ml of cream

  • 50 g of grated Gruyère cheese

Instructions

Step 1: Prepare the Spinach

  • Place the Cabera spinach discs in a bowl and microwave for about 1 minute.

  • Press them to remove excess water and set aside.

Step 2: Cook the Mushrooms

  • In a skillet, sauté the mushrooms over medium heat for 5 minutes until tender and slightly browned.

Step 3: Mix Cream and Spinach

  • Add the cream to the skillet with the mushrooms, then fold in the pressed spinach. Stir gently to combine.

Step 4: Assemble the Gratin

  • Transfer the mixture into an ovenproof dish.

  • Sprinkle generously with grated Gruyère cheese on top.

Step 5: Bake

  • Bake in a preheated oven at 190°C (375°F) for 12 minutes, until the top is golden and bubbling.

Serve

  • Serve hot as a side dish for your holiday feast or a cozy winter dinner.
