The Spinach Roll That Always Steals the Table


There’s always that one dish on the table that disappears first—and for me, it’s this spinach roll.
I remember seeing it at family gatherings, sliced into perfect green spirals, neatly arranged on a platter. It looked fancy, almost like something complicated… but once you learn the technique, it becomes one of those recipes you come back to again and again.
This version keeps the traditional charm of a classic spinach roulade, but with a few lighter, healthier tweaks—more protein, less heaviness, and just as much flavor.

Ingredients For the sponge:
6 egg whites
3 egg yolks
3 tbsp milk
3 tbsp water
300 g Cabera Frozen Spinach (thawed, well drained, finely chopped)
100 g whole wheat or oat flour
1 tsp baking powder
Pinch of salt
1 tbsp olive oil (optional)
For the filling:
250 g low-fat fresh cheese or cottage cheese
2–3 tbsp Greek yogurt
Salt, pepper, and herbs to taste
150–200 g lean turkey or chicken ham, thinly sliced
Optional: diced peppers or tomatoes
Optional: 1–2 mashed boiled egg yolks
Optional: minced garlic + a drizzle of olive oil
Instructions
Prepare the sponge — Preheat oven to 180°C. Whisk egg whites to stiff peaks. In another bowl, mix egg yolks with milk, water, salt and the drained chopped spinach. Gently add flour and baking powder, then fold in egg whites to keep it airy.
Bake — Spread evenly on a baking tray lined with parchment paper. Bake 15–20 minutes until set but still soft.
Roll while warm — Turn the sponge onto a damp kitchen towel, roll gently while warm, and let cool completely.
Prepare the filling — Mix fresh cheese with Greek yogurt, salt, pepper and herbs. Add ham, vegetables and optional mashed yolks or garlic/olive oil.
Assemble — Unroll cooled sponge, spread filling evenly, roll back into a tight log.
Chill — Wrap in plastic and refrigerate at least 1–2 hours.
Serving Slice into spirals and serve cold as an appetizer, on a party platter, or as a light protein-rich meal.
