The Pea and Mint Soup That Goes From Freezer to Bowl in 20 Minutes

A bag of peas from the freezer, an onion, a handful of mint. Twenty minutes later a bright green soup is on the table, smooth from the blender and creamy from a few spoonfuls of Greek yogurt.

Organic Pea and Mint Soup

Ingredients
• 4 cups Cabera organic frozen peas
• 1 small onion, chopped
• 1 clove garlic, minced
• 3 cups vegetable broth
• ¼ cup fresh mint leaves, chopped
• ½ cup plain Greek yogurt
• 2 tbsp butter
• Salt and pepper to taste
• Optional: Cabera organic potato wedges, to serve
Method
1. Melt the butter in a pot over medium heat. Add the onion and garlic and cook until translucent, about 4 minutes.
2. Add the frozen peas and vegetable broth. Bring to a boil, then simmer for 10 minutes.
3. Stir in the mint leaves and blend the soup until smooth using a blender or immersion blender.
4. Stir in the Greek yogurt for creaminess, season with salt and pepper, and heat through for 2 minutes.
5. Serve hot, garnished with a sprig of mint, and pair with crispy organic potato wedges for dipping.
Meal-prep tip: The soup keeps in the fridge for up to 3 days. Reheat it gently without letting it boil, so the yogurt stays smooth.
Make it your own
• Start the wedges first. Put the potato wedges in the oven before you begin the soup, so both are ready together.
• Make it vegan. Use olive oil in place of butter and a plant-based yogurt in place of Greek yogurt.
• Serve it cold. Chill the soup and serve it as a summer starter.
