Ingredients (Serves 4):
2 cups frozen organic spinach, thawed and drained
6 large eggs
1/2 cup crumbled feta cheese
1/4 cup milk
1 small onion, diced
2 tbsp olive oil
Salt and pepper to taste

Instructions:
Preheat oven to 375°F (190°C). Heat olive oil in an oven-safe skillet over medium heat.
Sauté onion until soft, about 5 minutes. Add thawed spinach and cook for 2 minutes.
Whisk eggs, milk, salt, and pepper in a bowl. Pour into the skillet and sprinkle with feta.
Cook on stovetop for 5 minutes until edges set, then bake in the oven for 10-12 minutes until fully set.
Slice and serve hot with organic straight-cut fries for a complete meal.
