Ingredients (Serves 4):

  • 2 cups frozen organic spinach, thawed and drained

  • 6 large eggs

  • 1/2 cup crumbled feta cheese

  • 1/4 cup milk

  • 1 small onion, diced

  • 2 tbsp olive oil

  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C). Heat olive oil in an oven-safe skillet over medium heat.

  2. Sauté onion until soft, about 5 minutes. Add thawed spinach and cook for 2 minutes.

  3. Whisk eggs, milk, salt, and pepper in a bowl. Pour into the skillet and sprinkle with feta.

  4. Cook on stovetop for 5 minutes until edges set, then bake in the oven for 10-12 minutes until fully set.

  5. Slice and serve hot with organic straight-cut fries for a complete meal.
