Organic Pea and Mint Soup

Ingredients (Serves 4):
4 cups frozen organic peas
1 small onion, chopped
1 clove garlic, minced
3 cups vegetable broth
1/4 cup fresh mint leaves, chopped
1/2 cup plain Greek yogurt
2 tbsp butter
Salt and pepper to taste

Instructions:
Melt butter in a pot over medium heat. Add onion and garlic, cooking until translucent, about 4 minutes.
Add frozen organic peas and vegetable broth. Bring to a boil, then simmer for 10 minutes.
Stir in fresh mint leaves and blend the soup until smooth using a blender or immersion blender.
